Ingredients:

  • 12 oz gluten free pasta of choice
  • 1 bag of Sonoma Creamery Parmesan Cheese Crisps, crushed
  • 12 large shrimp (16-20/lb size), cleaned w/ tails removed
  • 1 egg, scrambled
  • ½ cup gluten-free all-purpose flour
  • ¼ tsp garlic powder
  • Garlic Butter Sauce Ingredients:
  • ¼ cup olive oil
  • 1 stick unsalted butter (8 tbsp)
  • 1 tbsp fresh garlic, minced
  • 2 tbsp lemon juice
  • ½ cup fresh parmesan cheese, shredded
  • ½ cup pasta water
  • Salt and pepper, to taste
  • Garnish: additional shredded parmesan cheese, lemon zest and chopped parsley
Directions:
  1. Preheat oven to 400 degrees

  2. Add egg and garlic powder to a small bowl and whisk

  3. Prepare crispy shrimp by patting each shrimp dry followed by thoroughly coating with
    flour, then egg, and then crushed Sonoma Creamery Parmesan Cheese Crisps

  4. Spray baking sheet with non-stick oil of choice and bake shrimp at 400 degrees for ~12
    minutes until crispy and cooked

  5. Remove shrimp from oven and set aside

  6. Prepare pasta to preference

  7. Place olive oil and garlic in a large skillet over medium heat and sauté garlic until lightly
    browned

  8. Reduce heat to medium/low and add butter, pasta water and parmesan cheese while
    continuously stirring until cheese is melted

  9. Add lemon juice and salt and pepper to taste

  10. Add pasta to garlic butter sauce and toss thoroughly

  11. Top with crispy shrimp and additional shredded parmesan cheese, lemon zest and
    parsley
